Desert Stalks
Looking like dead plants, the Desert Stalks are a sub species of the Texas Tummy Twisters.
Instead of infesting stagnant waters, the desert stalks grow like plants, reproducing on mass until they're grown enough to attack any living thing in the area. Once infected, they hollow out the hosts, wearing it's skin and puppetting it round in a macabre spectacle.
They hide in plain sight, looking like dead stalks of wheat or corn, usually infesting active fields and allow humans to tend to them with water and other sustenance.
Mildly intelligent, they can mimic speech, but have no real comprehension of what they're saying, but do have self preservation instincts. Once all the food in an area has been consumed, they scatter and wonder off in random directions, looking for the next town, or farm to hide in and breed.
